Christmas Rice Pudding

Delicious Christmas Rice Pudding Recipe


In this recipe you may use any rice but consider the Arborio rice because it makes a rich pudding with a consistency that’s creamier than the regular. It’s barely sweetened, but most people like to stir it in warm milk and sprinkle some cinnamon and turbinado sugar on top.

SERVES/YIELD: 8

Ingredients:

  • 1 1/2 cups of short-grain white rice (Arborio as suggested)
  • 1 (2-inch) piece of cinnamon stick
  • 1 1/2 cups of water
  • 3/4 teaspoon of salt
  • 2 tablespoons of sugar
  • 1 qt whole of milk
  • 2 tablespoons of heavy cream
  • Accompaniments: warm milk, sugar (preferably turbinado), ground cinnamon

Instructions:

1 – Bring the rice, water, salt, and the cinnamon stick to a simmer in a 4 to 5 quart heavy pot. Then, reduce the heat to low and gently simmer, while covered, until the water is absorbed, about 8 to 10 minutes.

2 – Add 2 cups of milk with sugar and cream, and simmer, now uncovered, stirring occasionally until the rice has absorbed most of the milk but it’s still creamy (about 10 minutes). Add 1 cup of milk and simmer, stirring occasionally for 10 minutes. Stir in the remaining cup of milk and simmer, stirring constantly for about 10 to 15 minutes, until the rice is tender.

3 – Remove from the heat and cover it. Then let it stand for 15 minutes. Serve warm.
