Cake Batter Ice Cream Recipe

Homemade Ice Cream From Cake Batter


This is a homemade ice cream from cake batter recipe, and the nice part is that you can control the sweetness and intensity of your cake flavor by simply adding your favorite cake batter or cake mix to taste.

Learn how to make your own delicious cake batter ice cream with this very easy recipe. For this you’ll need an Ice Cream maker machine.

SERVES/YIELD: 6

Ingredients

  • 3 eggs
  • 1 cup of sugar
  • 2 cups of skim or 1% milk
  • 2 teaspoon of vanilla extract
  • 2 cups of heavy cream
  • Frosted cake chunks, optional
  • ½ to 1 cup of dry yellow/white cake mix or any cake mix/batter of your choice

Instructions

  1. In a large saucepan beat the eggs, milk, and sugar until it’s well blended.
  2. Cook the egg mixture over low heat for approximately 10 minutes, constantly stirring until it thickens. When ready it should smoothly coat the back of a wooden spoon.
  3. Remove the mixture from the heat and stir in the cake mix.
  4. Let the mixture cool down and then add the heavy cream and the vanilla extract.
  5. Stir it until blended, then refrigerate the mixture for several hours or even overnight until it’s completely chilled.
  6. Using your ice cream maker, pour the chilled mixture into the machine and stir it until the ice cream forms. When you first make it, it will typically be more like soft-serve. But if you want a firmer ice cream, transfer it to a sealed container once it reaches the soft-serve consistency, and then let it freeze for several hours until it hardens.
  7. Optional: if you desire, stir in chunks of frosted funfetti cake once the cake reaches a frozen yogurt consistency, and then mix a little bit more before freezing into ice cream.
