Easy Dark Chocolate Truffles Recipe
SERVES/YIELD: 25
Ingredients:
- For chocolate truffles:
- 200g (7oz) of Dark Chocolate
- 200ml (6.8fl oz) of Whipping Cream
- For chocolate coating:
- 50g (1.8oz) of Chocolate
- 100ml (3.4fl oz) of Whipping Cream
- Royal Icing or Melted White Chocolate for decorating (optional)
Instructions:
- Chop in very fine pieces (or grate) the dark chocolate, because the smaller the pieces the faster they melt, and place it into a heat proof bowl.
- Bring the cream to a boil in a sauce pan and pour it over the chocolate. Let it sit for 2 minutes before you stir it until completely smooth.
- Cover the pan with cling film and place it in the fridge for at least 2 to 3 hours. The chocolate needs to be firm enough so you can start working with it. Using your hands, role bite size balls and you may scoop each out with a melon scooper or a spoon. If you feel that the ganache (chocolate mix) is too sticky, you may place it back in the fridge for a little longer.
- Once you have rolled all the balls, chill them in the fridge until they are firm.
- Meanwhile, you can prepare the chocolate coating. Bring the cream to a boil and pour it over finely grated or chopped chocolate. Make sure the chocolate is in a heat proof bowl. Before stirring let it sit for 2 minutes, and then stir until smooth.
- Before coating your truffles, let the chocolate cool down a bit. To coat them your have to simply dip them in the chocolate and take them out using a fork or a spoon. Now, place them on a baking paper, making sure you have a chopping board or a tray underneath. Once done, get the tray and put them in the fridge until completely set.
