Barbecue Rooster and Sweet Potato Hash Recipe

Easy Barbecue Rooster Sweet Potato Hash Recipe


Usually, a hash is made with diced potatoes and leftover meats. In this recipe we use leftover braised chicken, sweet potatoes, barbecue sauce, and thyme. Instead of chicken you could use turkey or duck shredded leftovers.

This recipe is great for breakfast or for lunch adding a salad and a dollop of crème fraîche.

TIPS: As we use barbecue sauce in the mixture, it’s important to remember to  squeeze the moisture out of the potatoes before mixing them with the other ingredients. SERVES/YIELD: 6

Ingredients:

Hash:
  • 1 cup leftover shredded chicken, duck, or turkey
  • ½ cup barbecue sauce
  • 1 medium sweet potato (~175g), grated
  • 1 medium potato (~150g), grated
  • 2 garlic cloves, thinly sliced
  • 1 egg
  • 1 small onion, thinly sliced
  • 3-4 sprigs thyme, leaves only, fresh or dried
  • sunflower or grapeseed oil
  • sea salt and ground black pepper
Barbeque sauce:
  • ¼ cup maple syrup
  • ¼ cup malt or apple cider vinegar
  • ¼ cup brown sugar
  • 4 tablespoons tomato paste
  • ½ teaspoon hot smoked paprika
  • 1 garlic clove, finely chopped
  • ½ teaspoon cayenne pepper, or more
  • ½ teaspoon dried mustard

Instructions:

Hash:
  1. Pre-heat your oven to 450°F.
  2. Using your hands, squeeze the extra moisture from the grated potatos and sweet potatos.
  3. In a large bowl, mix together all the ingredients and season them with salt and pepper.
  4. You can cook these in either small pie pan or a muffin tin (6 large or 8-10 smaller).
  5. If you are using a muffin tin, before putting equal amounts of chicken and potato mixture into each mold pour a spoonful of oil into each mold and heat up the pan in the oven for 5 minutes until the oil is very hot, then put them in.
  6. Cook in the oven for 25 to 35 minutes (depending on the size) until golden brown.
  7. Serve right away with a side of barbecue sauce, if you wish.
Barbeque sauce:
  1. Mix all the ingredients together and simmer for 5 minutes. Set aside.
